Tasting Notes
In the glass, this Weissburgunder presents a pale straw to light lemon hue with bright, crystalline clarity. The nose is immediately appealing, with aromas of crisp pear, green apple and white peach layered over notes of citrus zest, blossom, freshly cut herbs and a subtle mineral edge. On the palate, the wine is dry, vibrant and finely textured, with a lovely interplay of juiciness and tension. Flavours of pear, apple and stone fruit are lifted by lemon and lime, white flowers and a gentle nuttiness that hints at lees contact rather than overt oak. The mid-palate is silky yet taut, carried by a precise line of acidity that keeps everything refreshing and focused. The finish is clean and mineral-driven, leaving a lingering impression of citrus and wet stone. Production
The grapes for Wasenhaus Weissburgunder 2023 are sourced from cool, carefully tended vineyards in southern Germany, where limestone- and loess-rich soils, combined with a temperate climate, provide ideal conditions for Pinot Bianco. Vines are farmed with an emphasis on vitality and balance in the vineyard, often with manual work and selective hand-harvesting to ensure only perfectly ripe, healthy grapes are brought to the cellar. In the winery, the fruit is gently pressed and fermented with a light touch, typically in stainless steel and/or neutral vessels to preserve the grape’s natural aromatics and tension. Extended time on fine lees adds subtle texture and depth without masking the wine’s freshness, resulting in a precise, quietly complex Weissburgunder that speaks more of place and grape than of winemaking intervention.

Wasenhaus Weissburgunder 2023 is a versatile food wine that shines alongside delicate, ingredient-focused dishes. It pairs beautifully with simply prepared fish and seafood (grilled trout, steamed cod, scallops, sushi and sashimi), fresh goat’s cheese or young soft cheeses, poultry dishes with light sauces, spring vegetables, asparagus, and salads featuring herbs and citrus. It also works well with lighter pasta or risotto, especially those highlighting seasonal greens or mushrooms. Serve well-chilled but not icy, ideally at 9–11°C (48–52°F), to allow the aromatics to unfold.
