The grapes for Vivallis Cuvée Chardonnay 2023 are sourced from hillside vineyards in Trentino Alto Adige, where cool Alpine nights and abundant sunshine help preserve acidity and develop aromatic intensity. The soils are predominantly calcareous and alluvial, providing good drainage and a subtle mineral backbone to the wine. Grapes are typically harvested in the early, cooler hours to retain aromatics and freshness, then gently pressed to avoid harsh phenolics. Fermentation takes place in temperature-controlled stainless-steel tanks, emphasizing fruit purity and varietal character. The wine then rests briefly on fine lees to enhance texture and complexity before bottling, with minimal intervention and a focus on preserving its crisp, clean profile.
Food & Serving
This Chardonnay is a natural partner for light, delicately flavoured dishes. Pair it with seafood such as grilled prawns, steamed mussels, or simply prepared white fish, as well as fresh salads, vegetable risottos, mild goat cheese and poultry dishes with herbs and lemon.
