In the cellar, Vincent Girardin favors a gentle, Burgundian approach: whole-bunch pressing, followed by a slow, temperature-controlled fermentation—often with indigenous yeasts—in French oak barrels. The wine is then aged on fine lees in barrel (with a judicious proportion of new oak) for over a year, with minimal bâtonnage to preserve finesse, before being lightly fined and bottled with minimal intervention to respect the purity of the terroir.
