Production
This Chassagne-Montrachet Vieilles Vignes is sourced from old Chardonnay vines rooted in the classic limestone-clay soils of the Côte de Beaune, where well-drained slopes and a cool Burgundian climate foster slow ripening and excellent aromatic precision. Grapes are typically harvested by hand to ensure careful selection and preserve fruit integrity, especially important given the lower yields of older vines. In the cellar, traditional Burgundian methods are used: gentle pressing, fermentation in French oak barrels and maturation on fine lees, with a judicious use of new wood to add texture and subtle complexity without overshadowing the wine’s mineral core.

This wine is a natural partner for refined dishes such as butter-poached lobster, seared scallops, roast chicken with morel mushrooms, veal in a creamy sauce or classic Burgundian specialties like pike quenelles and Comté cheese. Its balance of richness and acidity also makes it an excellent match for simply grilled white fish, fresh pasta with seafood, or earthy vegetable dishes featuring mushrooms and root vegetables.
