Vincent Dancer Pommard Pézerolles 2017 is a refined red Burgundy from one of the Côte de Beaune’s most coveted Premier Cru climats. Crafted from carefully selected fruit and aged in oak for at least 18 months, it offers the structure and depth Pommard is known for, with Dancer’s signature precision and elegance. This is a wine that bridges power and finesse, capturing the character of a historic site in a beautifully modern, restrained style.
Tasting Notes
In the glass, the 2017 Pommard Pézerolles shows a striking, luminous ruby-red core with vibrant reflections at the rim, hinting at both concentration and freshness. The nose opens with intense red and dark berry aromas—think wild cherry, raspberry and redcurrant—layered with subtle notes of sweet spice, fine oak, and a touch of dried rose and forest floor as it evolves in the glass.
On the palate, the wine is rich and full-bodied yet finely balanced, combining ripe fruit with a refined, textural mouthfeel. Flavors of juicy red berries, black cherry and a hint of plum are wrapped in delicate oak tones—vanilla, light toast and gentle baking spices. The tannins are firm but polished, giving structure without harshness, while a subtle saline edge lifts the long, persistent finish. Already approachable, this 2017 has the concentration and acidity to evolve gracefully over the next 8–12 years, gaining additional complexity and tertiary nuances with time in bottle.
Production
Sourced from the renowned Premier Cru Pézerolles vineyard in Pommard, on the northern side of the appellation, this wine reflects a particularly fine terroir: clay-limestone soils with excellent drainage, a favorable slope, and an exposure that encourages slow, even ripening of the grapes. The fruit is meticulously selected at harvest to ensure optimal ripeness and health, often picked by hand to preserve whole berries. In the cellar, traditional Burgundian techniques are used with a light touch—careful sorting, gentle extraction and a focus on purity of fruit. The wine is then matured in oak barrels for a minimum of 18 months, with a judicious use of new oak, allowing the wood to support rather than dominate the wine’s natural character.
Food & Serving
This Pommard Pézerolles 2017 pairs beautifully with refined dishes that can stand up to its structure and depth: roast duck with cherries, veal or pork tenderloin, game birds, or mushroom-based dishes such as wild mushroom risotto or truffle-infused poultry. It also works wonderfully with semi-hard cheeses like Comté, aged Gouda or Tomme. For optimal enjoyment, serve at 16–18°C (about 60–64°F). Decanting for 30–60 minutes before serving will help open up the aromatics and soften the tannins, especially in its younger years.
