Production
Sourced from selected vineyards in the historic Valpolicella Classico zone in Veneto, the grapes grow on hillside sites with a mix of limestone, clay and alluvial soils that naturally limit yields and enhance aromatic intensity. Corvina, Corvinone and Rondinella are harvested by hand at optimal ripeness, ensuring only the healthiest, most intact clusters are selected for the traditional appassimento process. The bunches are then laid out in well-ventilated drying lofts, where they slowly dehydrate over several months, concentrating sugars, aromas and tannins. After gentle pressing, fermentation proceeds at controlled temperatures to preserve fruit purity, followed by extended maceration to extract color and structure. The wine is then matured in oak (often a mix of large casks and barrels) to integrate tannins and develop complexity before a final period of bottle aging prior to release.

This Amarone is an excellent companion to robust, richly flavored dishes: think slow-braised beef, venison, lamb shanks, osso buco, game stews and aged hard cheeses such as Parmigiano Reggiano or Grana Padano. It also pairs beautifully with truffle risotto, wild mushroom dishes and dark chocolate-based desserts for a more indulgent experience. Serve at 18–20°C, allowing the bottle to come gradually to temperature. Decanting for 1–2 hours is recommended to help the wine fully open, soften the tannins and reveal its layered aromatics.
