Sourced from well-situated parcels on the limestone and clay-limestone soils of Saint-Émilion, L’Eclat de Valentin benefits from the classic Right Bank terroir that naturally favors Merlot and Cabernet Franc. The vines are tended with great care, and harvesting is typically done by hand to ensure that only perfectly ripe, healthy grapes reach the cellar. After careful sorting, the grapes are vinified parcel by parcel in temperature-controlled vats to preserve fruit purity and aromatic complexity. Fermentation and maceration are managed gently to extract fine tannins rather than harshness, followed by maturation in French oak barrels (a portion new, the rest used) to bring structure, texture and subtle spice without overwhelming the wine’s terroir-driven character.

L’Eclat de Valentin 2019 is a versatile partner at the table, pairing beautifully with classic dishes such as roast lamb, entrecôte with herb butter, duck breast, or beef Bourguignon. It also works very well with truffled poultry, mushroom risotto, lentil stews, and aged hard cheeses like Comté or matured Gouda. Serve at 16–18°C (60–64°F) to show its full aromatic range; in warmer weather, a brief chill to the lower end of that range is ideal.
