These slopes, with calcareous-clay and marl soils, provide excellent drainage and help concentrate flavor while preserving the variety’s hallmark perfume and acidity. Grapes are typically harvested by hand to ensure careful selection of bunches at optimal ripeness. In the cellar, a traditional approach is favored: gentle crushing and destemming, followed by an extended maceration to extract color, tannin and aromatic complexity from the Nebbiolo skins. Fermentation takes place in temperature-controlled vessels, after which the wine is aged in wood (often large Slavonian or older oak casks) to refine tannins and integrate flavors, before further bottle aging prior to release.
