Vezzoli Franciacorta Vendemmia Zero Pas Dosè is a bone-dry, precision-crafted sparkling wine from the heart of Lombardy, Italy. Tasting Notes
In the glass, this Franciacorta shows a bright, pale straw-yellow colour with fine, persistent bubbles that form a delicate, continuous mousse. The nose is clean and expressive, offering notes of lemon zest, green apple, fresh almond, and white flowers, layered with hints of brioche, chalk, and a subtle saline touch from extended lees contact.
On the palate, Vendemmia Zero Pas Dosè is razor-sharp yet beautifully balanced, with vibrant acidity and a linear, mineral backbone. Flavours of citrus, crisp pear, and stone fruit intertwine with nuances of toasted hazelnut, pastry, and wet stone, leading to a long, precise, and savoury finish. The absence of dosage highlights its dryness and purity, making it both refreshing and seriously complex. With its structure and tension, this wine has very good aging potential over the next 5–8 years, gaining creaminess and more pronounced autolytic notes with time in bottle.
Production
Sourced from carefully selected vineyards in Franciacorta, in Lombardy, the grapes benefit from morainic soils rich in stones and minerals, as well as a temperate climate moderated by Lake Iseo. Chardonnay brings finesse and citrus-driven elegance, while Pinot Nero adds structure, depth, and subtle red-fruited nuances. The grapes are hand-harvested to ensure optimal ripeness and quality, then gently pressed to obtain only the finest juice. Primary fermentation takes place in temperature-controlled conditions, often with a portion in stainless steel and, depending on the cuvée, some in oak to add texture and complexity. The wine then undergoes secondary fermentation in bottle following the traditional method, with an extended period of aging on the lees to develop fine bubbles and layered aromatics. At disgorgement, no dosage is added (Pas Dosè), resulting in a wine that is a transparent reflection of the vintage and terroir.
Food & Serving
This Franciacorta is a superb match for refined seafood dishes such as oysters, carpaccio of scallops, sushi and sashimi, or simply grilled fish with lemon and herbs. It also pairs beautifully with crudo, shellfish, delicate tempura, goat’s cheese, and lightly aged hard cheeses. Serve well-chilled at around 6–8°C (43–46°F) to emphasise its freshness and aromatic precision. A short decant in a wide-bowled sparkling wine glass or allowing it to open in the glass for a few minutes will help reveal its full complexity and textural depth.
