Tasting Notes
In the glass, this Vino e Visciole shows a deep, intense ruby hue with garnet highlights, almost ink-like at the core, hinting at both richness and concentration. The nose is immediately expressive and inviting, with layered aromas of ripe sour cherries, black cherries in syrup, wild berries and pomegranate, supported by subtle notes of dried rose petals, sweet spices and a gentle hint of cocoa. On the palate, it is silky and enveloping, with a natural sweetness that is beautifully balanced by vibrant acidity from the sour cherries. Flavors of cherry compote, redcurrant, and marasca cherry liqueur unfold slowly, alongside nuances of vanilla, almond and a touch of baking spice. The texture is velvety and rounded, yet never cloying, making each sip both indulgent and refreshing. Enjoyable upon release, it has the structure and sweetness to age gracefully for several years, developing more complex notes of dried fruit and spice over time.

Production
This traditional visciolato-style wine is rooted in the rolling hills of the Marche region, where vineyards benefit from a mix of maritime influence and inland breezes, as well as clay-limestone soils that favor concentrated, aromatic fruit. Sour cherries (visciole) are typically harvested by hand at full ripeness, then macerated with sugar to extract their vivid color, perfume and flavor. The resulting cherry must is blended with red wine and left to slowly integrate, often in stainless steel or neutral vessels, in order to preserve freshness and aromatic intensity. The process is carefully controlled to achieve a harmonious balance between sweetness, fruit purity and natural acidity, yielding a dessert wine that is rich yet refined.

Food & Serving
Velenosi Querciantica Vino e Visciole Selezione is an excellent companion to chocolate desserts, cherry tarts, dark fruit cakes, panna cotta with berry coulis, and blue or aged cheeses where the sweetness and acidity can cut through the saltiness. It also works beautifully on its own as an after-dinner ‘vino da meditazione’, sipped slowly in good company. Serve lightly chilled, around 12–14°C, to highlight its aromatic lift and freshness. Decanting is generally not necessary, but opening the bottle 10–15 minutes before serving allows the intense cherry aromas to fully express themselves.
