Tasting Notes
In the glass, Ninfa Sibilla Rosso shows a deep ruby color with violet highlights, hinting at both freshness and concentration. The nose opens with vibrant aromas of ripe blackberries, red cherries and plums, followed by subtle notes of sweet spice, black pepper, dried herbs and a touch of cocoa.

Production
Sourced from hillside vineyards in Marche, Ninfa Sibilla Rosso reflects a terroir shaped by sun-drenched slopes, clay-limestone soils and cooling breezes from the nearby Adriatic Sea. Grapes are typically harvested at optimal ripeness, often picked parcel by parcel to ensure each variety enters the winery in prime condition. After gentle crushing and a temperature-controlled fermentation in stainless steel, the different varieties are vinified separately to preserve their unique character, then carefully blended to achieve balance between fruit, structure and spice. A period of maturation, partly in stainless steel and possibly in large or used oak, helps round the tannins and knit the components together without overwhelming the wine’s fresh, vibrant profile.

Ninfa Sibilla Rosso is a natural match for classic Italian comfort food: think tomato-based pastas, lasagna, pizza with cured meats, or grilled sausages. It also pairs beautifully with roasted chicken, pork chops, charcuterie boards, and semi-aged cheeses such as pecorino or asiago. Serve at 16–18°C (60–64°F) for ideal balance of fruit and structure. A brief 20–30 minutes in a carafe can help the aromas open up, especially if the wine is served on the younger side.
