Tasting Notes
In the glass, Rossomato 2019 typically shows a deep ruby core with garnet flashes toward the rim, medium to high intensity and a slight translucence that hints at both concentration and finesse. The nose is generous and inviting: sun‑warmed red and black cherries, wild strawberries and macerated raspberries, layered with notes of dried herbs, liquorice, Mediterranean scrub, and a hint of blood orange zest. Subtle earthy undertones, a touch of leather and gentle spice from time in wood round out the bouquet. On the palate, this is a medium‑ to full‑bodied wine with vibrant, juicy fruit and a savoury core. Grapes are typically harvested by hand, allowing strict selection of perfectly ripe, healthy bunches in the vineyard. In the cellar, Valter Mattoni favours a low‑intervention philosophy: spontaneous fermentation with native yeasts, extended maceration to gently extract colour, tannin and aroma, and careful temperature control to protect the fruit. The wine is then aged – often in neutral vessels or older barrels – to refine texture and integrate tannins without imposing heavy oak flavours, before being bottled with minimal fining or filtration to retain its natural character.
