Tasting Notes

The mousse is delicate yet energetic, forming a creamy crown that hints at its extended aging on the lees. The nose is elegant and layered, with aromas of crisp green apple, pear and lemon zest supported by white flowers, fresh bread crust and a touch of hazelnut and chalky minerality. On the palate, it is dry, vibrant and precise, with a refreshing acidity that carries flavors of citrus, orchard fruits and subtle stone fruit. The traditional bottle fermentation and 24 months of lees aging add texture and complexity—notes of brioche, biscuit and light pastry round out the mid-palate, leading to a long, saline and finely balanced finish. Production
Sourced from some of the highest vineyards in the Vallagarina valley in Trentino Alto Adige, the Chardonnay grapes benefit from significant day–night temperature swings that preserve acidity and aromatics while ensuring slow, even ripening. The fruit is carefully selected from the best plots, then harvested—typically by hand—to protect the integrity of the bunches. After a gentle pressing, the base wine is fermented at controlled temperatures to preserve purity of fruit. The second fermentation takes place in the bottle, following the traditional Champagne method, again under closely controlled conditions. The wine then rests on its lees for 24 months, gaining complexity, texture and finesse, before disgorgement and the addition of a small dose of expedition liqueur to fine-tune balance and style.

This Trento Brut Millesimato 2020 is a versatile sparkling wine that shines both as an aperitif and at the table. Pair it with oysters, scallops, sushi, sashimi and delicate white fish, or serve alongside light pasta dishes, risotto with shellfish, grilled vegetables and fresh cheeses such as mozzarella, burrata or young goat cheese. It also complements poultry dishes with subtle cream sauces and classic antipasti. Serve well-chilled at around 8–10°C.
