Tasting Notes
In the glass, the 2019 Brunello di Montalcino shows a deep, vibrant ruby core with garnet reflections at the rim, hinting at both concentration and longevity. The nose is initially restrained, then gradually opens to reveal dusty earth, dried roses and violets, and subtle notes of incense. With time, darker nuances of black cherry, plum skin, sweet tobacco and a whisper of cedar and licorice emerge, creating an alluring and complex bouquet.
On the palate, the wine glides across the tongue with a silken texture that belies its underlying power. Juicy black cherry and wild red berries are framed by fresh, mouth-watering acidity and a pronounced mineral backbone. Fine, firm tannins build steadily toward the finish, giving the wine tension and impressive structure without feeling heavy. The aftertaste is long, dramatic and beautifully layered, with lingering notes of salted licorice, cedar, subtle spice and a pleasant, refined bitterness that adds a savory edge. Valdicava lies in the northern reaches of Montalcino, an area known for its cooler exposures, clay-limestone soils and excellent diurnal temperature shifts—conditions that favor aromatic complexity and firm, age-worthy structure in Sangiovese (locally Sangiovese Grosso). The estate focuses on low yields and meticulous vineyard work, with careful bunch selection and, typically, hand harvesting to ensure only perfectly ripe, healthy fruit is brought to the winery. Vinification is traditionally focused yet precise: the grapes are gently crushed and fermented in temperature-controlled tanks, allowing for a long, measured maceration to extract fine tannins and deep color without sacrificing elegance. The Brunello then spends extended time aging in large oak (often Slavonian or a mix of large-format barrels), where it slowly refines its texture and aromatic profile before bottling and additional bottle rest, in accordance with Brunello di Montalcino regulations.
Food & Serving
This Brunello is an outstanding partner to rich, savory dishes—think Tuscan bistecca alla fiorentina, slow-braised beef or veal, game birds, roasted lamb with herbs, or dishes featuring porcini mushrooms and truffles. It also pairs beautifully with aged hard cheeses like Parmigiano Reggiano or Pecorino Toscano. Serve at 16–18°C (around 60–64°F) to allow the aromatics and structure to show at their best. In its youth, decanting for 1–2 hours is highly recommended to help the wine open up and soften the tannins; as it matures, a shorter decant or even serving straight from the bottle with a bit of glass time will be sufficient.
