Valdespino Pedro Ximénez Niños VORS is one of the true pinnacles of the sherry world, here in a precious 37.5 cl demi bottle. Crafted from extraordinarily old wines with an average age believed to be around 50 years, this is a Pedro Ximénez of almost incomparable depth, intensity and finesse. Often mentioned in the same breath as Valdespino’s legendary Moscatel Toneles, Niños VORS stands as a reference point for ultra‑old, sweet sherry from Jerez in Andalucía, Spain.

Tasting Notes
In the glass, Niños VORS shows an almost opaque, dark mahogany colour, bordering on black, with a slow, viscous swirl that immediately hints at its concentration. The nose is astonishingly complex and layered: notes of dark molasses, black fig, date and raisin mingle with aromas of curry spice, toasted coconut, balsamic/eucalyptus, tar, Cuban cigar tobacco, nutmeg and exotic spice. It is both hedonistic and incredibly nuanced, revealing new facets with every swirl. The palate is velvet-smooth, dense and almost creamy, with an extraordinary sweetness (around 470 g/l of residual sugar) that is held perfectly in check by a piercing, vivid acidity. Flavours echo the nose—dried fruits, toffee, cocoa, spice and fine tobacco—unfolding in waves across a seemingly endless finish. Despite its sheer power, the wine remains remarkably balanced and poised, never cloying. Thanks to its age and structure, this VORS (Very Old Rare Sherry, minimum 30 years, but here well beyond that) has immense staying power: once opened, a well‑stoppered bottle can be enjoyed over weeks, and cellared bottles will hold and evolve gracefully for decades.

Production
Niños VORS is produced in the heart of Andalucía’s sherry triangle around Jerez, where the warm, sunny climate and Atlantic influence provide ideal conditions for Pedro Ximénez. The grapes are traditionally sun‑dried (asoleo) on mats after harvest, concentrating sugars and flavours before pressing. The intensely sweet must is then vinified and fortified, and the wine enters a very old solera and criadera system, where it ages oxidatively for many decades in seasoned American oak casks. Only tiny quantities are drawn off from the oldest tiers, ensuring remarkable concentration, complexity and an average age far above the legal VORS minimum. The resulting wine is one of the most concentrated and characterful expression of Pedro Ximénez in Jerez.

Food & Serving
This is a true meditation wine, but it shines with food as well. Pair it with dark chocolate desserts, flourless chocolate cake, walnut tart, sticky toffee pudding, or classic Spanish almond pastries. It is also sublime with intense blue cheeses like Roquefort or Cabrales, or simply poured over vanilla ice cream. Serve lightly chilled at around 12–14°C in a small white wine or port glass. Decanting is not essential, but pouring the wine a few minutes in advance and allowing it to warm very slightly in the glass will help its extraordinary aromatics unfold.
