Vadin-Plateau Champagne 1er Cru Chêne La Butte Dosage Zero is a precise, terroir-driven Blanc de Blancs crafted exclusively from Chardonnay in the heart of Champagne. This is Champagne in its purest form: no dosage, no make-up, just the clear expression of a single premier cru site. It’s a cuvée for those who appreciate tension, minerality, and the quiet sophistication of grower Champagne.
Tasting Notes
In the glass, Chêne La Butte shows a luminous pale gold color with fine, persistent bubbles that form a delicate mousse. The nose is focused and refined, opening with notes of lemon zest, green apple, and white flowers, layered with chalky minerality, fresh brioche, and a touch of almond and wet stone as it evolves in the glass.
On the palate, this is taut, dry, and incredibly precise, the hallmark of a zero-dosage Champagne. The attack is vibrant with citrus and orchard fruits, followed by hints of pear, crushed limestone, and subtle pastry tones from extended lees aging. The texture is creamy yet linear, driven by lively acidity and a long, saline, mouthwatering finish. Though already beautifully drinkable, this non-vintage cuvée has the structure and tension to develop further complexity over the next 3–6 years.
Production
Chêne La Butte comes from a premier cru parcel in the Champagne region of France, where Chardonnay vines grow on classic chalk and limestone soils that give the wine its precision and mineral spine. Vines are tended with great care, often with an eye toward sustainable and low-intervention practices to preserve the natural balance of the vineyard. Grapes are harvested by hand at optimal ripeness to ensure selection of only the healthiest bunches. In the cellar, the must is gently pressed and fermented in stainless steel or a combination of steel and neutral oak, followed by an extended élevage on the lees to build texture and complexity. Secondary fermentation takes place in bottle, and because this is a dosage zero Champagne, no sugar is added at disgorgement, allowing the terroir to speak clearly and unadorned.
Food & Serving
This Champagne is superb with clean, precise dishes that echo its freshness and minerality: oysters, scallops crudo, sashimi, or a simple tartare of sea bass with citrus and herbs. It also pairs beautifully with goat cheese, lightly dressed seafood salads, and delicate vegetable dishes such as asparagus or fennel. Serve well-chilled, ideally around 8–10°C (46–50°F), to highlight its energy and finesse. A brief 10–15 minutes in the glass or a quick splash into a small decanter can help the aromas open, but prolonged decanting is not necessary.
