In the glass, the 2018 Ulysses Cabernet Sauvignon shows a deep, opaque ruby-purple hue, hinting at its intensity and concentration. The nose is layered and refined: blackcurrant and ripe black cherry lead, supported by notes of cedar wood, laurel leaf, mocha, licorice and a subtle clay-earth minerality. As it opens, more high-toned aromas emerge, adding lift and freshness—think redcurrant, dried herbs and a touch of graphite.
On the palate, this Cabernet is medium to full-bodied with a tightly woven core of dark fruit—cassis, blackberry and black cherry—wrapped in fine-grained, silky tannins. Production
The Ulysses vineyard lies on the western side of Napa Valley’s Oakville AVA, an area famed for its well-draining alluvial and clay-loam soils and excellent exposure. These conditions, combined with the moderating influence of nearby hills, produce Cabernet Sauvignon of structure, depth and distinctive earth-and-cedar inflected character. Grapes are typically harvested by hand in small lots, allowing for rigorous selection of only the best clusters. In the cellar, vinification is precise and detail-oriented: gentle extraction preserves purity of fruit and fine tannins, followed by maturation in high-quality French oak barrels to build complexity and texture without overwhelming the wine’s natural freshness and terroir expression.

This 2018 Ulysses Cabernet Sauvignon is a natural partner for refined, flavorful dishes such as herb-crusted lamb, dry-aged ribeye, roast beef with jus, or braised short ribs. It also pairs beautifully with game birds, mushroom dishes, and aged hard cheeses like Comté or mature cheddar. For optimal enjoyment, serve at 16–18°C (60–64°F). In magnum, the wine benefits from generous aeration: decant 1.5–2 hours before serving in its youth, and about 1 hour if enjoyed after several years of cellaring.
