Crafted from Pinot Meunier, Chardonnay, and Pinot Noir, it delivers both precision and personality in the glass. This cuvée highlights the Bord de Marne’s chalk and clay slopes, offering a Champagne that is as gastronomic as it is refreshing.

Tasting Notes
In the glass, Bord de Marne Extra Brut typically shows a pale straw to light golden color, enlivened by a fine, persistent mousse. On the nose, it opens with ripe orchard fruits—pear, yellow apple, and Mirabelle plum—layered with citrus zest, white flowers, fresh brioche, and a subtle chalky minerality. The palate is tense yet generous, driven by Pinot Meunier’s juicy fruit and framed by Chardonnay’s cut and finesse. Expect flavors of crisp apple, lemon curd, stone fruit, and a touch of red berry from the Pinot Noir, all supported by vibrant acidity and a bone-dry, saline finish. The Extra Brut dosage keeps the wine linear and precise, making it especially food-friendly. Enjoy it now for its energy and freshness, or cellar for 3–6 years to allow greater complexity, nuttiness, and autolytic notes to emerge.

Production
Sourced from vineyards along the Marne River in the heart of Champagne, this cuvée reflects a mix of chalk, clay, and limestone soils that give the wine both breadth and minerality. Tristan Hyest works as a récoltant-manipulant (grower-producer), tending his own vines—often with a sustainable, low-intervention mindset—and harvesting by hand to ensure optimal ripeness and careful selection of bunches. In the cellar, the base wines are gently pressed, fermented in stainless steel and/or neutral vessels to preserve purity of fruit, and undergo malolactic fermentation according to the vintage’s character. Extended lees aging in bottle builds texture and complexity before disgorgement, with a restrained Extra Brut dosage added to highlight the natural balance and terroir expression.

Food & Serving
This Extra Brut Champagne is a versatile partner at the table, ideal with oysters, scallop crudo, sushi, and simply prepared white fish, as well as charcuterie, fried seafood, tempura, and soft-rind cheeses like Brie or Coulommiers. Its structure and dryness also make it a smart match for roast chicken, pork tenderloin, or vegetable dishes featuring mushrooms and root vegetables. Serve well-chilled at around 8–10°C (46–50°F). A brief 10–15 minutes in the glass or a quick, light decant in a chilled carafe can help the aromas open up without losing the wine’s vibrant mousse.
