Harvesting is typically done by hand to ensure careful selection of only healthy, perfectly ripe clusters, particularly from higher-altitude sites that yield more refined, elegant fruit. In the cellar, the grapes are gently pressed and fermented at controlled low temperatures in stainless steel to capture the variety’s floral and fruity character. The wine is then aged briefly on fine lees in steel tanks to enhance texture and balance, without the influence of oak, before bottling.
