Tormaresca Fichimori Salento is a distinctive red from southern Italy that brings together the warmth of Puglia and the freshness of a wine crafted to be enjoyed slightly chilled. Made by Tormaresca, Antinori’s flagship project in the region, it reflects a strong focus on local identity, native varieties, and the modern revival of Apulian winemaking.

Tasting Notes
In the glass, Fichimori shows a vivid, deep ruby-purple color that hints at its ripe fruit character. The nose is fresh and immediate, with juicy red and dark berry notes, a Mediterranean herbal touch, and a subtle spicy edge from the Syrah. On the palate, it is soft, supple, and fruit-driven, with Negroamaro providing depth and structure while the Syrah adds lift and fragrance. The texture is smooth, the finish is fresh and clean, and its style makes it especially enjoyable in its youth, though it will hold well over the short to medium term.

Production
Fichimori comes from Masseria Maime in Salento, where the vines benefit from the maritime climate, warm Mediterranean temperatures, and calcareous-clay soils that help preserve balance and aromatic expression. The best grapes are selected and harvested by hand, then gently destemmed and pressed. A long 5-day cold maceration is followed by racking and fermentation without the skins at 18°C to emphasize fragrance, color, and a fresh, easy-drinking profile.

Food & Serving
This is a versatile red that works beautifully with grilled white meats, roasted vegetables, pasta with tomato-based sauces, charcuterie, and semi-aged cheeses. Serve it well chilled, around 12–14°C, and there is no need to decant unless you prefer to let it open briefly in the glass.
