The nose is generous and layered: sweet vanilla fudge and crème brûlée meet honeyed malt, toasted oak, and warm baking spices, with hints of citrus zest, dried apricot, and a gentle nuttiness emerging as it opens. On the palate, this is full-bodied and powerful yet remarkably balanced for a cask strength whiskey. Expect a silky, oily texture carrying flavors of caramelized brown sugar, ripe orchard fruits, vanilla pod, and creamy toffee, intertwined with clove, nutmeg, and a touch of white pepper from the oak. The Irishman Cask Strength 2022 is produced by Walsh Whiskey, drawing on Ireland’s temperate climate, pure water sources, and long tradition of triple distillation. The spirit is distilled three times in copper pot stills, a hallmark of premium Irish whiskey, to achieve exceptional purity and smoothness while preserving depth of flavor. Only a small number of outstanding ex-bourbon casks are selected each year by Master Distiller Bernard Walsh for this release. After slow maturation in these first-class American oak barrels, the whiskey is married and bottled at natural cask strength, non-chill filtered, to retain its full body, aromatic oils, and authentic character.

Food & Serving
This is a contemplative sipping whiskey best enjoyed neat or with a few drops of water to reveal its many layers. It pairs beautifully with rich, indulgent foods: think dark chocolate with a high cocoa content, butter toffee, crème brûlée, or a well-aged hard cheese such as mature Gouda or Comté. It also complements roasted nuts or a premium cigar for an after-dinner experience. Serve slightly below room temperature, around 18–20°C (64–68°F), in a tulip-shaped whiskey glass. Decanting isn’t necessary, but allowing the whiskey to sit in the glass for several minutes—and revisiting it after adding a touch of water—will greatly enhance the aroma and complexity.
