Production
Terralsole’s vineyards lie on the southeastern slopes of Montalcino, an area bathed in generous sunshine and cooled by maritime breezes, with soils of clay, limestone, and galestro (friable schist) that are ideal for Sangiovese. This combination of altitude, exposure, and stony, well-draining soils yields grapes of natural concentration, aromatic intensity, and vibrant acidity. From the outset, Terralsole has been committed to sustainable, low-impact farming: organic fertilization, cover crops between the rows, and an emphasis on biodiversity and soil health. The estate has been fully organic since 2018, following years of working according to organic principles.
Grapes for the Brunello are harvested by hand at optimal ripeness, with strict selection in the vineyard and again at the winery to ensure only the healthiest, best clusters are used. Fermentation typically takes place in temperature-controlled tanks with careful extraction—favoring gentle pump-overs rather than aggressive handling—to preserve Sangiovese’s finesse and aromatic clarity. The wine is then aged for several years in a combination of large neutral casks and carefully chosen barrels, allowing it to gain structure and complexity without overwhelming the fruit. Extended bottle aging before release ensures that the Brunello reaches the market with its elements well integrated and ready to enjoy, while still offering plenty of life ahead.
Food & Serving
Terralsole Brunello di Montalcino 2016 is a natural partner for richly flavored, savory dishes. Classic Tuscan pairings such as bistecca alla fiorentina, braised beef or lamb, wild boar ragù over pappardelle, and roasted game birds showcase the wine’s depth and structure. It also works beautifully with truffle-infused dishes, porcini mushrooms, aged pecorino, and well-matured hard cheeses, where its acidity and tannins cut through richness and highlight umami notes.
Serve at 16–18°C (60–64°F) for optimal expression; too warm and the alcohol may dominate, too cool and the aromatics can close down. Decanting is highly recommended: give it at least 1–2 hours in a decanter if drinking now to allow the bouquet to fully open and the tannins to soften. For those with patience and a cellar, this wine will reward being opened and slowly enjoyed over the course of an evening, evolving beautifully in the glass.

Founded in 1996, Terralsole—literally “land toward the sun”—is the personal project of winemaker and artist Mario Bollag and his wife, musician Athena Tergis. Located on the sun-drenched southeastern side of Montalcino, the estate was conceived as a place where artistry, music, and wine could come together in a single, coherent vision. This sensibility is apparent not only in the expressive, carefully crafted Brunellos, but also in the distinctive labels that grace each bottle, which reflect the couple’s broader creative life.
Over more than two decades, Terralsole has quietly earned a loyal following for its richly textured yet finely balanced Brunello di Montalcino, often receiving strong critical recognition for both its classic Brunello and single-vineyard bottlings.
