Tasting Notes
In the glass, Olivia Bitter shows a deep amber hue with copper and mahogany highlights that hint at its complexity and macerated botanicals. The nose opens with lifted aromas of citrus peel, wild herbs and dried flowers, supported by gentle notes of spice and a subtle, earthy undertone. On the palate, it is intense yet beautifully poised, with a bittersweet core. The botanicals are carefully selected, with an emphasis on local herbs, citrus and aromatic plants that thrive in the region’s sun-drenched yet breezy climate. After harvesting and selection, the ingredients are macerated in neutral spirit to gently extract aroma, flavor and color, followed by slow blending, sweetening and resting to allow the components to integrate. The result is a handcrafted bitter that speaks clearly of its place of origin and the estate’s commitment to natural, low‑intervention methods.

Olivia Bitter is a versatile partner at the table and the bar. Enjoy it as an aperitif in a spritz with quality sparkling wine and soda, or use it in place of traditional Italian bitters in a Negroni, Americano or Boulevardier.
