Description
Tenuta Saiano Demos Vermouth is a characterful Italian aperitif that bridges the worlds of artisanal wine and classic mixology. Crafted in the hills of Emilia, it captures the estate’s vineyard-first philosophy in a refined, aromatic style that’s made for sipping neat or starring in cocktails. Demos is a vermouth with a sense of place: expressive, quietly complex, and unmistakably Italian.
Tasting Notes
In the glass, Demos Vermouth shows a luminous, medium-deep hue that hints at its botanical richness and careful maceration. On the nose, it offers layers of wild herbs, citrus peel, subtle florals, and a delicate bitter-spice character—think gentian, wormwood and fragrant Mediterranean scrub—lifted by notes of dried orange, chamomile, and a whisper of resinous spice.
The palate is finely balanced between gentle sweetness and measured bitterness. A core of wine-driven freshness carries flavors of candied citrus, alpine herbs, and aromatic roots, framed by a clean, savory backbone. The texture is smooth yet vibrant, with just enough grip from the botanicals to make each sip appetizing and refreshing. Enjoyed within a couple of years of bottling, Demos retains its aromatic precision best when stored cool and consumed within weeks of opening.
Production
Tenuta Saiano lies in the rolling hills of Emilia, where vineyards share space with orchards, olive trees and woodland, creating a rich and biodiverse environment. The base wine for Demos Vermouth is produced from estate-grown grapes farmed with great respect for the land, typically harvested by hand to preserve delicate aromatics and grape integrity. After vinification of the base wine, a carefully selected blend of herbs, roots, and citrus peels—many inspired by the local terroir and traditional Italian botanicals—is macerated to extract aroma and flavor before being blended with the wine and a touch of sweetness. The result is gently clarified and bottled with minimal intervention to preserve its authentic character.
Food & Serving
Demos Vermouth is superb as an aperitivo, served chilled on its own with a slice of orange or a twist of lemon, or lengthened with soda and plenty of ice. It pairs beautifully with classic Italian antipasti—cured meats, aged cheeses, olives, and focaccia—as well as lighter dishes such as marinated seafood, grilled vegetables, and herb-driven tapas. Serve around 8–12°C (46–54°F) for maximum freshness and aromatic lift. Decanting is not necessary, but letting it rest in the glass for a minute or two allows the botanicals to fully unfurl.
