Tasting Notes
In the glass, Dorien N°45 shows a pale, luminous straw color with silvery highlights and a very fine, persistent bead—a hallmark of carefully handled Chardonnay from chalk-rich soils. The mousse is delicate yet energetic, creating an elegant frame for the wine’s lean, focused profile.
On the nose, expect an enticing blend of lemon zest, green apple and white peach layered with chalk dust, fresh brioche, crushed shell and a hint of roasted hazelnut. Subtle floral notes—acacia and white blossom—mingle with a cool, saline edge that speaks clearly of Le Mesnil-sur-Oger. The palate is precise and linear, with vibrant acidity cutting through a core of citrus and orchard fruit. Flavors of Meyer lemon, yuzu, pear skin and green almond unfold over a backbone of wet stone and sea spray, with a touch of pastry cream and lightly toasted bread from extended lees aging. The finish is long, dry and mouthwatering, leaving a lingering impression of chalk and citrus pith. Thanks to its structure and low dosage, this NV Champagne has the backbone to age gracefully for 5–8 years from release, gaining more nutty, brioche-like complexity and creamy texture while retaining its mineral spine.
Production
Sourced exclusively from Grand Cru vineyards in Le Mesnil-sur-Oger in the Côte des Blancs, this Champagne is rooted in deep, pure chalk soils that give Chardonnay its hallmark tension and salinity. Vines benefit from a cool, continental climate and excellent sun exposure, allowing slow, even ripening and the development of intense yet finely etched flavors. Harvest is typically carried out by hand to ensure pristine fruit and careful sorting in the vineyard. In the cellar, Stephane Regnault works with a minimalist touch, fermenting the base wines in a mix of stainless steel and oak to balance precision with subtle texture and complexity. Malolactic fermentation may be partially allowed, depending on the vintage components, to fine-tune freshness and creaminess. After blending several reserve wines to achieve stylistic consistency, the cuvée undergoes secondary fermentation in bottle and extended ageing on the lees, enhancing its brioche notes and fine mousse. Dorien N°45 is finished with a restrained extra brut dosage, emphasizing terroir, purity and length over richness.

This refined Blanc de Blancs is a natural partner for pristine seafood and elegantly prepared dishes. Enjoy it with oysters, scallop crudo, sashimi, tartare of sea bass, or simply grilled white fish with lemon and herbs. It also shines alongside lobster, crab, caviar, sushi, tempura, goat’s cheese, or delicate poultry dishes with light cream sauces. Serve well-chilled at 8–10°C (46–50°F) to highlight its freshness and minerality; as it warms slightly in the glass, more of the nutty and brioche notes will emerge. A brief decant—10 to 15 minutes in a chilled carafe—or simply opening the bottle a few minutes before serving can help the wine unfurl its aromatics, but extended decanting is not necessary.
