Crafted in small quantities by Stephane Colas, this Champagne captures the classic character of the region while showcasing the precision and personality of an independent producer.

Tasting Notes
In the glass, this Champagne Brut shows a bright, pale golden hue with a fine, persistent mousse that speaks to careful secondary fermentation and extended time on the lees. The nose is inviting, with notes of crisp green apple, pear and lemon zest layered over hints of white flowers, brioche and a subtle nuttiness. On the palate, it is dry, lively and well-structured, with a refreshing acidity that keeps the wine precise and focused. Flavors of citrus, orchard fruit and stone fruit are wrapped in a creamy texture, complemented by delicate pastry, almond and chalky mineral tones typical of quality Champagne. The finish is clean and lingering, making this an excellent choice both as an aperitif and at the table. Production
Sourced from vineyards in the Champagne region of France, Stephane Colas Champagne Brut reflects the cool climate and chalk-rich soils that have made Champagne world-famous. The traditional Champagne grape varieties, grown on well-exposed slopes, benefit from careful vineyard work and selective harvesting to ensure only healthy, ripe grapes are brought to the cellar. After gentle pressing, the base wines are fermented separately before blending to achieve a balanced, house style Brut. The wine then undergoes its second fermentation in bottle and is matured on its lees, allowing texture and complexity to develop before disgorgement and final dosage. Bottling in magnum further enhances aging and flavor integration, yielding a particularly harmonious Champagne.

This Champagne Brut Magnum is a versatile partner at the table and an ideal centerpiece for festive occasions. Serve it alongside oysters, fresh shellfish, sushi, smoked salmon or delicate white fish for a classic pairing, or enjoy it with light poultry dishes, creamy cheeses and canapés. It also works beautifully with salty snacks such as charcuterie and gougères. For optimal enjoyment, serve well-chilled at around 8–10°C (46–50°F). Decanting is not necessary, but pouring the first glass and giving the wine a few minutes in the glass will allow the aromas to fully open up.
