Tasting Notes
In the glass, the 2021 FAY Cabernet Sauvignon displays a deep, vibrant ruby to garnet hue with youthful purple highlights along the rim. The nose is expressive and layered, opening with ripe blackcurrant, blackberry and dark cherry, followed by violet, graphite, cedar, and subtle baking spice. Hints of cocoa, dried herbs, and a touch of vanilla linger in the background, adding complexity as it sits in the glass.
On the palate, this wine is supple yet structured, with polished tannins and a seamless texture. Flavors of black cherry, cassis, plum and blackberry are framed by notes of mocha, sweet tobacco, and a savory, mineral edge that is very characteristic of Stags Leap District. The Cabernet Franc, Malbec and Petit Verdot contribute aromatic lift, color depth and a touch of spice. Production
The FAY Cabernet Sauvignon 2021 is sourced from the storied FAY Vineyard in the Stags Leap District of Napa Valley, a site known for its volcanic and alluvial soils that deliver both power and finesse. The area’s unique terroir—warm afternoons, cool evening breezes from the San Pablo Bay, and well-draining gravelly loam—allows the grapes to ripen fully while retaining freshness and aromatic complexity. Grapes are typically harvested by hand, parcel by parcel, to ensure optimal maturity and careful selection in the vineyard. In the cellar, the fruit is sorted again before a gentle destemming and fermentation in temperature-controlled vessels, allowing for a precise extraction of color, aroma and fine-grained tannin. The wine is then aged in high-quality French oak barrels (a mix of new and seasoned wood), where it develops its signature texture, integration of oak spice, and layered complexity before release.
Food & Serving
This Cabernet is a natural partner for refined, flavorful cuisine. Think grilled or roasted lamb, dry-aged ribeye, beef tenderloin with herb butter, or slow-braised short ribs. It also pairs beautifully with dishes featuring wild mushrooms, rosemary, thyme, or truffle, as well as hard cheeses like aged cheddar, Comté or Parmigiano Reggiano. For best enjoyment, serve at around 16–18°C (60–65°F). Decanting for 45–90 minutes when young will help the aromatics open and allow the tannins to soften, revealing the wine’s full depth and nuance.
