Tasting Notes
In the glass, the 2021 Cask 23 shows a deep, saturated ruby to purple hue, with an almost inky core that hints at its concentration and youth. The nose is layered and complex, weaving together ripe blackcurrant, blackberry and black cherry with notes of graphite, cedar, violet, cocoa, tobacco leaf and subtle baking spice. On the palate, this is a structured yet beautifully refined Cabernet Sauvignon: dense black fruit and crème de cassis are supported by fine-grained, chalky tannins and a vibrant line of acidity that keeps the wine lifted and precise. Hints of dark chocolate, espresso, warm earth, licorice and savory herbs unfold with air, leading to a long, persistent finish that lingers with mineral and spice. Production
Cask 23 is sourced exclusively from Stag’s Leap Wine Cellars’ two famed estate vineyards in the Stags Leap District of Napa Valley: SLV, with its volcanic, rocky soils giving structure and intensity, and FAY, with its alluvial, gravelly loams lending plush fruit and perfume. Each block is harvested by hand at optimal ripeness, with careful sorting in the vineyard and at the winery to ensure only pristine berries are used. The lots from SLV and FAY are vinified separately in small stainless steel or temperature-controlled fermenters, with gentle extraction to preserve finesse. After fermentation, the wines are aged in a high proportion of French oak barrels (a significant portion new) for extended élevage, during which only the most distinctive and harmonious barrels are selected and blended to become Cask 23.

This 2021 Cask 23 is a natural partner for refined, richly flavored dishes: think dry-aged ribeye, herb-crusted rack of lamb, venison, or slow-braised short ribs. It also shines with truffle-infused dishes, wild mushrooms, roasted root vegetables, and aged hard cheeses such as Comté, Parmigiano-Reggiano or mature Gouda. Serve at 16–18°C (60–64°F) to highlight both depth and aromatics. Decanting is strongly recommended in its youth—give it 1–3 hours before serving to allow the wine to fully open and reveal its layered complexity.
