Compared with the richer 2020, the 2021 shows a more vivid, floral and lifted character, emphasizing purity over power. Bottled in magnum for extended aging and celebratory occasions, it captures Spottswoode’s hallmark balance of intensity, elegance and site transparency, rooted in one of Napa’s most esteemed family-owned estates.

Tasting Notes
In the glass, the 2021 Estate Cabernet Sauvignon is deep, saturated ruby with a youthful violet rim that hints at its long life ahead. The nose is beautifully perfumed and expressive: notes of fresh violets, blackcurrant (cassis), blackberry and ripe plum are interwoven with subtler nuances of graphite, crushed stone, pencil shavings and a touch of cedar and spice. On the palate, this is a medium to full-bodied Cabernet that marries concentration with poise. Dark berry fruit flows across the tongue, supported by finely etched tannins that feel firm yet remarkably silky. Layers of cassis, black cherry and blue fruits are framed by savory mineral tones, hints of cocoa and a gentle tobacco leaf complexity. The finish is long, elegant and persistent, echoing florals and graphite. In magnum, the 2021 has excellent aging potential: it should drink impressively on release but will reveal increasing nuance and harmony over 15–25 years, with the larger format encouraging a slower, more graceful evolution.

Production
The Spottswoode Estate vineyard lies on the western edge of St. Helena in Napa Valley, where alluvial, gravelly loam soils and cool morning fogs from the Mayacamas Mountains create ideal conditions for Cabernet Sauvignon of refinement and structure. The estate has long been farmed organically and biodynamically, with meticulous attention to vine balance and low yields to ensure concentration and purity of fruit. Grapes are harvested by hand, block by block, at optimal ripeness, and rigorously sorted before fermentation. The wine is vinified in a combination of stainless steel and/or concrete and then aged in high-quality French oak barrels, a significant portion new, to add subtle texture and complexity without overwhelming the vineyard character. As an estate wine, every step—from vineyard to bottle—is overseen with a focus on expressing the unique Spottswoode terroir in a polished, age-worthy style.

Food & Serving
This 2021 Estate Cabernet Sauvignon is a natural partner for refined, flavorful dishes such as dry-aged ribeye, herb-crusted lamb, roast duck with blackcurrant glaze, or braised short ribs. It also pairs beautifully with truffle-inflected dishes, wild mushroom risotto, or hard cheeses like aged Comté, Manchego or mature cheddar. Serve at 16–18°C (60–64°F) to let the aromatics fully blossom. In its youth, decanting for 1–2 hours is recommended, especially from magnum, to allow the wine’s floral and mineral complexity to unfurl; as it matures, a gentle splash decant will be sufficient to remove sediment and open the bouquet.
