Tasting Notes
In the glass, it shows a deep, concentrated color that hints at its intensity and age-worthiness. The nose opens with layers of dark berries, cedar, violet, and warm spice, unfolding with air into a more complex and refined bouquet. On the palate, it is full-bodied and polished, with ripe black fruit supported by vibrant acidity and firm, well-integrated tannins. The Cabernet Franc and Petit Verdot add nuance and lift, while 20 months in French oak bring depth, texture, and savory complexity. This is a wine with excellent aging potential and should evolve beautifully over many years.

Production
The wine comes from Spottswoode’s estate vineyards in St. Helena, Napa Valley, where the soils and warm climate provide ideal conditions for structured, expressive Cabernet Sauvignon. The vineyards have been farmed organically since 1985 and are now certified biodynamic, reflecting a long-term commitment to sustainable viticulture. The 2019 blend is led by Cabernet Sauvignon, with small amounts of Cabernet Franc and Petit Verdot for added complexity, and the wine was matured for 20 months in French oak, much of it new, to build richness and definition.

Food & Serving
This Cabernet Sauvignon pairs beautifully with grilled ribeye, roast lamb, braised short ribs, or aged hard cheeses. Serve at around 16–18°C, and consider decanting for 1–2 hours if drinking young to allow the aromatics and structure to open fully.
