Simonsig Méthode Cap Classique Cuvée Royale Blanc de Blancs 2017 is a benchmark South African sparkling wine crafted in the traditional Champagne method. Made exclusively from Chardonnay, it showcases the precision, purity and elegance that Stellenbosch can achieve in premium Cap Classique. This cuvée has a long-standing reputation as one of the country’s finest Blanc de Blancs, reflecting both Simonsig’s pioneering history and its relentless pursuit of quality.

Tasting Notes
In the glass, the 2017 Cuvée Royale Blanc de Blancs shows a pale straw to light gold hue, animated by a very fine, persistent mousse and delicate streams of bubbles. The nose is refined and layered, opening with fresh lemon zest, green apple and white peach, followed by autolytic notes of brioche, toasted hazelnut and a gentle creaminess from extended lees aging. On the palate, it is dry, focused and beautifully balanced, with a vibrant core of citrus and orchard fruit wrapped in a silky, chalk-tinged texture. The acidity is bright yet integrated, carrying flavours of lemon curd, crisp pear and subtle pastry through a long, mineral-driven finish. Still youthful but already harmonious, this vintage has the structure and concentration to age gracefully for several more years, rewarding cellaring for up to 7–10 years from the vintage in good conditions.

Production
The Cuvée Royale Blanc de Blancs 2017 is sourced from carefully selected Chardonnay vineyards in Stellenbosch, where cool maritime influences and decomposed granite and sandstone soils contribute tension, finesse and a distinct mineral edge. Grapes are harvested by hand at optimal ripeness to preserve natural acidity and freshness, then gently whole-bunch pressed to obtain only the purest juice. Fermentation takes place in temperature-controlled conditions, and the base wines are blended for balance and complexity before bottling for the traditional second fermentation. The wine then rests on its lees for an extended period – significantly longer than the minimum for Cap Classique – building texture, fine mousse and its signature brioche and nutty nuances before disgorgement and a carefully judged dosage.

Food & Serving
This Blanc de Blancs is a natural match for classic seafood pairings such as oysters, fresh prawns, scallops, sushi and sashimi, as well as lightly grilled fish and delicate ceviche. It also shines alongside soft-ripened cheeses, tempura vegetables, roast chicken with herbs or a simple plate of charcuterie and crisp, salted snacks. Serve well-chilled at around 6–8°C for maximum freshness, allowing it to warm slightly in the glass to reveal more complexity. Decanting is not necessary; instead, pour into quality flutes or white wine glasses and give the wine a few minutes in the glass to open up its full aromatic range.
