Tasting Notes
In the glass, this 2019 vintage is deeply colored and almost opaque, hinting at its concentration before the first sip. The nose is beautifully layered, opening with dark plums, blackcurrant tart, cassis, and anise, then unfolding into nuances of nutmeg and rose petals. The palate is equally dramatic, echoing the dark plum and blueberry notes from the aromatics while adding pomegranate, licorice, crushed stone, tobacco, sage, and a subtle touch of smoke. Rich, intense, and beautifully structured, it finishes with remarkable length and depth. This is a wine built for the long haul and should evolve gracefully for 30–40 years or more.

Production
Hillside Select is sourced from 14 small hillside parcels surrounding Shafer’s winery in Napa Valley, where the slopes and well-drained soils naturally keep yields low and fruit concentration high. The 2019 vintage was vinified by winemaker Elias Fernandez and matured for 32 months in 100% new French oak, a regimen that adds polish, structure, and complexity to the wine’s powerful core.

Food & Serving
This is an outstanding match for premium grilled ribeye, dry-aged beef, braised short ribs, venison, or lamb with herbs. Serve at around 16–18°C and consider decanting for several hours to allow the wine’s layers to open fully and soften its formidable structure.
