Tasting Notes
In the glass, the 2018 Hillside Select is a deep, opaque garnet-purple, almost inky at the core with a vibrant rim that hints at its youth and longevity. The nose is immediately luxurious, unfolding in layers of crème de cassis, blueberry pie and black cherry compote, interwoven with notes of smoked meat, warm earth, tar, violet, and a lifted hint of Provençal herbs. On the palate, this is a full-bodied, structured Cabernet with great drive and purity. Dense black fruits—cassis, blackcurrant, and blackberry—are framed by firm, fine-grained tannins and a lively, mouthwatering freshness that keeps the richness in perfect balance. Subtle tones of graphite, dark chocolate, tobacco leaf, and dried sage emerge with air, adding complexity and length. The finish is long, savory, and subtly herbal, promising further nuance with time. In magnum, this 2018 has excellent aging potential: it will drink beautifully from around 2026 onward and can easily evolve for 20–30 years or more under proper cellaring conditions.

Production
Hillside Select is sourced exclusively from Shafer’s estate hillside vineyards in the Stags Leap District of Napa Valley, an area known for its volcanic and alluvial soils, excellent drainage, and dramatic exposures that yield Cabernet of both power and finesse. These steep vineyard blocks are meticulously farmed, often by hand, with careful canopy management and low yields to ensure optimal ripeness and concentration. Grapes are harvested by hand at night or in the cool early hours to preserve freshness, then sorted rigorously before fermentation in temperature-controlled stainless steel tanks. After fermentation and extended maceration to extract color, flavor, and tannin, the wine is aged for an extended period (typically around 32 months) in 100% new French oak barrels, allowing the tannins to refine and the complex bouquet to develop before bottling.

Food & Serving
This commanding Napa Cabernet calls for rich, flavor-packed dishes: think dry‑aged ribeye, grilled lamb chops with rosemary, slow-braised short ribs, venison with a dark berry reduction, or truffled mushroom and parmesan risotto. Mature hard cheeses such as aged cheddar, Comté, or Parmigiano-Reggiano also make excellent companions. Serve at 16–18°C (60–65°F) to highlight both the fruit and the structure. For current or near-term drinking, decanting is highly recommended—allow at least 1–2 hours in a decanter, and even longer if opened in its first decade, to let the wine fully open and reveal its layered complexity.
