Tasting Notes
Deep, opaque ruby in the glass, this is a powerful and intensely layered Cabernet. The nose is packed with dark plum, blackcurrant tart, cassis, anise, nutmeg, and rose petals, leading into a palate of ripe black plum and blueberry wrapped around pomegranate, licorice, crushed stone, tobacco, sage, and a subtle smoky note. The wine finishes with exceptional persistence and breadth, showing both opulence and structure. While already impressive in a large glass, it has the depth, tannin framework, and balance to age beautifully for at least 20 years, gaining even more nuance over time.

Production
The 2017 vintage was crafted by winemaker Elias Fernandez and spent 32 months in 100% new French oak, a regimen that underlines the wine’s richness and aging potential. The fruit comes from 14 small hillside parcels at the Shafer estate, where the slopes naturally limit yields and help produce concentrated Cabernet Sauvignon with strong site character.

Food & Serving
Best served at 16–18°C and ideally decanted for at least 1–2 hours when opened young. This is a wine for rich dishes such as dry-aged ribeye, braised short ribs, lamb saddle, venison, or truffle-infused mushroom dishes, as well as mature hard cheeses.
