Tasting Notes
In the glass, it shows a deep, opaque ruby-black color that hints at its concentration. The nose is profoundly expressive, with layers of black plum, cassis, blackberry pie, dark cherry, anise, nutmeg, rose petals, and a subtle savory edge of cedar and smoke. The palate is broad, rich, and multi-layered, repeating the dark fruit profile while adding pomegranate, liquorice, crushed stone, tobacco, sage, and a lingering smoky mineral note. Despite its power, the wine retains remarkable balance and freshness, with a finish that seems to go on forever. It is drinking beautifully now, especially in large glasses, and has the structure to evolve for at least another 20 years.

Production
Hillside Select comes exclusively from Cabernet Sauvignon grown on the steep slopes surrounding Shafer’s estate in Napa Valley, where the rocky hillside soils naturally limit yields and concentrate flavor. The grapes are harvested from 14 small vineyard parcels, each contributing nuance and complexity to the final blend. For this vintage, winemaker Elias Fernandez aged the wine for 32 months in 100% new French oak, a élevage that helped build texture, structure, and aromatic depth while preserving the wine’s signature intensity.

Food & Serving
This is a statement wine that pairs best with equally bold dishes such as grilled ribeye, dry-aged beef, lamb chops, venison, or slow-braised short ribs. It also works beautifully with truffle dishes, wild mushroom risotto, or aged hard cheeses. Serve at 16–18°C and, while it can be enjoyed immediately, decanting for 2–4 hours is recommended to allow the wine to fully open.
