Tasting Notes
In the glass, the 2017 Vaio Armaron shows a deep garnet core with ruby reflections, dense and almost opaque, hinting at its concentration and structure. The nose opens with intense aromas of ripe black cherry, dried plum and fig, followed by notes of candied orange peel, cocoa, licorice and sweet spices. Subtle herbal tones, tobacco leaf and a delicate floral lift add further layers of complexity.
On the palate, this Amarone is full-bodied and enveloping, with rich, sun-drenched fruit framed by velvety yet firm tannins. Flavors of maraschino cherry, blackcurrant and dried berries mingle with dark chocolate, espresso, cinnamon, clove and a touch of balsamic depth. The signature cherry-wood aging brings a fine, slightly sweet spice and a distinctive, polished texture. The finish is long, warm and persistent, with savory hints and a refined bitterness that keeps the wine balanced. Production
Vaio Armaron is a single historic vineyard in the heart of Valpolicella Classica, characterized by hillside slopes with well-drained, calcareous and alluvial soils that naturally limit yields and concentrate flavor. The grapes—Corvina, Rondinella and the estate’s unique Molinara clone—are carefully hand-harvested and selected, then subjected to the traditional appassimento process, drying in fruttaio lofts for several months to intensify sugars, aromas and structure. After a gentle pressing and a slow, temperature-controlled fermentation, the wine matures in medium-sized cherry-wood casks, following Serego Alighieri family tradition. This unusual choice of wood, combined with extended aging, adds a distinctive spice profile and an extra layer of elegance to the final wine.
Food & Serving
This is a meditative red best enjoyed with rich, flavourful dishes: braised beef cheeks, slow-cooked lamb shank, game stews, aged hard cheeses like Parmigiano Reggiano or Grana Padano, and dishes with truffle or wild mushrooms all make superb partners. It also works beautifully as a contemplative after-dinner wine, perhaps alongside dark chocolate or mature blue cheese. Serve at 18 °C (around 64 °F) in large Bordeaux or Burgundy-style glasses. Decanting for at least 1–2 hours before serving is recommended to allow the wine to fully open and express its intricate layers.
