Tasting Notes
In the glass, it shows a deep, inviting red color. The nose is layered and expressive, with aromas of dried plum, black cherry, laurel, eucalyptus, and a subtle balsamic lift that adds complexity. On the palate, it is warm, savory, and well structured, with soft tannins and a long finish of fruit, spice, and herbs. The wine feels full-bodied yet fresh, with the kind of harmony that suggests excellent development over time. It has strong aging potential and should continue to gain nuance in bottle.

Production
The grapes come from vineyards in the fertile hills between Montello and Colli Asolani, around 150 meters above sea level, where ferretto soils provide both good drainage and enough richness to support full ripening. The vines are trained in Guyot and benefit from the mild climate and generous rainfall of the Veneto countryside. Harvest is done by hand between late September and October to respect the different ripening cycles of the varieties. Fermentation takes place in large stainless-steel tanks or oak barrels, followed by extended aging in used oak casks. The wine is then refined in bottle, allowing the components to integrate and the final blend to achieve greater balance and depth.

Food & Serving
This is a natural match for grilled or roasted red meats, braised dishes, game, and rich pasta dishes with meat sauces. It also pairs well with aged cheeses and savory mushroom-based recipes. Serve at 16-18°C, and decanting for about an hour is recommended, especially in its youth, to open up the aromatic layers and soften the structure.
