This non-vintage Brut highlights the precision and elegance that have made Asolo Prosecco Superiore DOCG a favorite among discerning sparkling wine drinkers. With its fine bubbles, balanced structure, and dry finish, it offers a more gastronomic, sophisticated take on Italy’s beloved sparkling wine.

Tasting Notes
In the glass, this Prosecco Superiore shows a bright, pale straw-yellow color with shimmering green highlights and a persistent, fine mousse. The bubbles are delicate and continuous, forming a subtle crown at the rim. On the nose, it opens with fresh notes of green apple, pear, and white peach, layered with hints of acacia blossom, wisteria, and a gentle citrus lift. Subtle nuances of fresh herbs and a touch of mineral salinity add complexity. The palate is crisp and dry, in line with its Brut style, offering flavors of crunchy orchard fruit, lemon zest, and a suggestion of almond and white flowers. The mousse is creamy yet precise, giving a lively, refreshing mouthfeel supported by well-integrated acidity and a clean, slightly mineral finish. Enjoyed best within a few years of release, it is crafted for immediate pleasure but has enough structure and freshness to hold well for short-term cellaring.

Production
The Glera grapes for this wine are sourced from hillside vineyards in the Asolo area of Veneto, where a mix of marl, clay, and limestone soils, along with good altitude and ventilation, naturally limits yields and enhances aromatic purity. The vineyards benefit from a temperate climate, with warm days and cool nights that help preserve acidity and finesse in the grapes. Harvest is typically carried out by hand to ensure only healthy, perfectly ripe clusters are selected. After gentle pressing, the base wine is produced at controlled low temperatures to retain delicate aromatics, then undergoes a second fermentation using the Charmat-Martinotti method in pressurized stainless-steel tanks. This controlled, slow re-fermentation allows for a fine, persistent perlage while maintaining the wine’s fresh fruit character and elegant, dry profile.

Food & Serving
This Asolo Prosecco Superiore Brut is an excellent aperitif and a versatile partner at the table. It pairs beautifully with seafood crudo, oysters, shrimp cocktail, sushi and sashimi, as well as light fish dishes, vegetable tempura, and delicate starters like prosciutto with melon or fresh mozzarella and burrata. It also complements light pasta dishes with seafood or spring vegetables, and is superb with canapés and finger foods at gatherings. Serve well chilled, ideally at 6–8 °C (43–46 °F), in a tulip-shaped sparkling wine glass to concentrate its aromas. Decanting is not recommended; simply chill the bottle thoroughly before opening and pour gently to preserve the fine mousse.
