This cuvée is made in the traditional method with an impressive maturation time, putting it firmly in the realm of top grower-style sparkling wines. What sets this wine apart is its long lees aging (56 months in bottle after 11 months on fine lees in large oak), ultra-low dosage of just 2 g/l, and the thoughtful sourcing of fruit from three distinct regions: Bürgstadt in Franken, the Tauber Valley, and the Kaiserstuhl in Baden. Tasting Notes
In the glass, Tradition Brut Magnum shows a bright, pale lemon-gold color with subtle copper highlights from the Pinot components and an exceptionally fine, persistent mousse. The nose is complex and elegant, opening with aromas of yellow stone fruit—think mirabelle and ripe peach—layered with hints of wild red berries. Subtle brioche and pastry notes from the long lees aging mingle with a delicate, chalky and stony minerality, along with touches of citrus zest and a whisper of hazelnut.
On the palate, this Sekt is dry, precise and beautifully structured, with the magnum format emphasizing freshness as well as finesse. Chardonnay brings tension and citrus-driven brightness, Pinot Noir adds red-fruited depth and gentle grip, while Pinot Meunier contributes breadth and a supple, creamy mid-palate. The very low dosage keeps the wine taut and linear, highlighting its mineral backbone and mouthwatering acidity. The finish is long, refined and saline, with lingering notes of stone fruit, subtle red berries and fine autolytic nuances. Production
The fruit for Tradition Brut Magnum comes from carefully selected sites in three regions: Pinot Noir from Bürgstadt in western Franken, known for its red sandstone soils and elegant, finely structured Pinots; Pinot Meunier from the cooler Tauber Valley, which lends aromatic lift and juiciness; and a small portion of Chardonnay from the volcanic soils of the Kaiserstuhl in Baden, adding tension and finesse. Grapes are hand-harvested to ensure optimal ripeness and sorting, then gently pressed to obtain a pure, fine must. The base wines spend 11 months on fine lees in large wooden casks, undergoing spontaneous malolactic fermentation for added texture and depth. The traditional method second fermentation takes place in bottle, followed by an extended 56 months of aging on the lees before disgorgement. A minimal dosage of 2 g/l is added, resulting in a bone-dry, terroir-driven Sekt with remarkable precision and complexity.
Food & Serving
This refined Brut is a highly versatile food companion, pairing beautifully with oysters, scallops, sashimi, and other delicate seafood, as well as fine charcuterie, poultry terrines, and lightly smoked fish. It also shines alongside creamy risottos, soft cheeses like brie or camembert, and refined vegetable dishes such as asparagus or mushroom tart. Serve well-chilled at 8–10°C (46–50°F) to highlight its freshness and precision; in magnum, a temperature closer to 10°C works particularly well. A gentle decant in a carafe or simply pouring the first glass 10–15 minutes before serving can help the wine open up aromatically, especially if enjoyed closer to cellar temperature.
