Production
Séguinot-Bordet farms vineyards on the famous Kimmeridgian limestone and clay soils that define the Chablis terroir, rich in fossilized seashells and marine deposits. This cool northern Burgundian climate, combined with the poor, stony soils, naturally limits yields and concentrates flavor while preserving bright acidity. Grapes are harvested at optimal ripeness—often a careful mix of hand and machine picking depending on the parcel—then gently pressed to protect purity of fruit. Fermentation typically takes place in temperature-controlled stainless-steel tanks to maintain freshness and aromatic precision, with aging on fine lees to build texture and complexity without masking the wine’s mineral backbone. The result is a Chablis that speaks clearly of place: focused, saline, and elegantly chiseled.
Food & Serving
Seguinot-Bordet Chablis 2023 is a superb partner for seafood of all kinds—think oysters on the half shell, steamed mussels, grilled fish, sushi, and sashimi. It also pairs beautifully with goat’s cheese, fresh cheeses, light poultry dishes, vegetable tarts, and simple preparations of shellfish with butter and herbs. Serve well-chilled but not icy, ideally around 9–11°C (48–52°F), to allow the aromatics to open.
