Tasting Notes
In the glass, Metagitinion Bio 2019 shows a deep golden to light amber hue, with a subtle haze that reflects its minimal-intervention approach and lack of heavy filtration. The color hints at the extended skin contact, inviting you into a richer, more textural expression of Vostilidi.
The nose is complex and quietly exotic: think dried apricot, candied citrus peel and ripe quince layered with notes of chamomile tea, wild herbs, orange blossom and a gentle touch of honey and spice. On the palate, the wine is dry, medium-bodied and beautifully structured, with a fine, food-friendly tannic grip that comes from the grape skins. Flavors of preserved lemon, stone fruit and bergamot are woven together with saline minerality and a subtle nuttiness, leading to a long, savory finish. Production
Metagitinion is crafted on the Ionian Islands, where maritime breezes, abundant sunshine and limestone-rich soils shape the character of Vostilidi. The vineyards are farmed organically and biodynamically, with a strong focus on soil health, biodiversity and low yields to enhance concentration and purity of fruit. Grapes are harvested by hand at optimal ripeness, then fermented spontaneously with native yeasts. Extended skin contact during fermentation transforms this white grape into a full-fledged orange wine, building color, texture and aromatic complexity. The wine is then matured in neutral vessels—such as old oak or similar inert containers—on its fine lees, and bottled with minimal intervention, often unfined and lightly filtered, to preserve its authentic, unpolished expression of place.
Food & Serving
This structured, textural orange wine is extremely versatile at the table. It pairs beautifully with Mediterranean cuisine—think grilled octopus, marinated anchovies, seafood stews, as well as herb-roasted chicken, pork with lemon and oregano, or rich vegetable dishes like roasted root vegetables, stuffed peppers and moussaka. It also stands up well to cheeses, from aged hard cheeses to washed-rind and semi-soft styles. Serve at 10–13°C (50–55°F) to showcase both its freshness and complexity. A light decant of 20–30 minutes helps the aromatics unfurl and smooths the tannins, especially if you’re opening the bottle while it’s still relatively young.
