Tasting Notes
The 2007 vintage shows deep, opaque color and impressive density in the glass. The nose is wonderfully layered, with aromas of cherry liqueur, blackberry, cassis, licorice, garrigue, dried Mediterranean herbs, and exotic spice, all unfolding with great intensity and clarity. On the palate, it is monumental yet polished, with a velvety texture, concentrated dark fruit, and ripe tannins framed by vibrant acidity and pronounced mineral tension. The finish is exceptionally long, echoing with notes of dark berries, crushed stone, warm herbs, and spice. While already remarkable, it has the structure and balance to continue evolving gracefully for many years.

Production
James Berry Vineyard sits in the Willow Creek District of Paso Robles, where limestone-rich soils, elevated vineyard sites, and a distinctive inland-coastal climate create ideal conditions for powerful, expressive Rhône-style wines. The fruit is typically harvested by hand at optimal ripeness, and the vineyard’s varied parcels are selected to build complexity and layering in the final blend. Vinification is guided by Saxum’s pursuit of intensity without sacrificing freshness, with careful extraction and élevage used to preserve the wine’s purity, structure, and mineral edge. The blend for this vintage is centered on Grenache, Mourvèdre, and Syrah, resulting in a wine of exceptional depth and harmony.

Food & Serving
This is a wine for richly flavored dishes such as braised short ribs, grilled lamb, venison, beef tenderloin, or slow-roasted game, as well as aged hard cheeses. Serve it at around 16–18°C, and decant for at least 1–2 hours, ideally longer if opened young, to allow the wine’s aromatics and structure to fully раскрыться.
