Tasting Notes
In the glass, Santus Franciacorta Dosaggio Zero shows a luminous straw-yellow color with fine, persistent bubbles forming a delicate mousse. The nose is clean and incisive, opening with citrus zest, green apple, and crisp pear, followed by notes of white flowers, freshly baked bread, and a subtle mineral edge. On the palate, it is sharp, tight, and wonderfully structured, with a racy acidity that keeps everything focused and refreshing. Flavors of lemon, lime, crunchy orchard fruit, and a hint of yellow plum are layered over nuances of brioche, toasted hazelnut, and chalky minerality derived from its long aging on the lees. The finish is long, dry, and saline, underlining the wine’s complexity and precision. Production
Santus Franciacorta Dosaggio Zero is produced exclusively from estate-grown grapes—approximately 70% Chardonnay and 30% Pinot Nero—sourced from Santus’ own vineyards in Lombardy’s Franciacorta region. Here, diverse morainic soils and a temperate climate influenced by nearby lakes provide ideal conditions for elegant, finely structured sparkling wines. Grapes are carefully harvested by hand to ensure optimal ripeness and selection before undergoing gentle pressing. The base wines are vinified separately by varietal and parcel, then blended to achieve balance and complexity. The wine is made using the traditional method, with a secondary fermentation in bottle and an extended period of aging on the lees to build texture, depth, and complexity. At disgorgement no sugar is added in the dosage, resulting in a true “Dosaggio Zero” style that reflects the vineyard and the vintage with maximum clarity.

This Franciacorta Dosaggio Zero is an outstanding partner for refined, savory dishes where acidity and precision are key: think oysters, shellfish, sashimi and crudo, or simple grilled fish with lemon and herbs. Serve well-chilled, ideally around 6–8°C (43–46°F), to emphasize its tension and minerality.
