This cuvée highlights Sardinia’s long tradition of producing sun-dried dessert wines, reinterpreted with Santadi’s meticulous, quality-driven approach.

Tasting Notes
In the glass, Latinia 2019 typically shows a deep golden to amber hue, with bright reflections that hint at both richness and concentration. The nose is intensely aromatic, offering layers of dried apricot, candied citrus peel, acacia honey, and ripe peach, complemented by notes of figs, chamomile, and a gentle Mediterranean herbal lift—think wild thyme and dried flowers. On the palate, this passito is unctuous yet finely balanced. Expect rich flavors of dried stone fruit, orange marmalade, honeycomb, and caramelized pear, supported by a thread of refreshing acidity that keeps the wine from feeling heavy. Subtle hints of almond, spice, and saline minerality emerge on the long, persistent finish, reflecting its maritime origins. Thanks to its sugar-acid balance and concentration, the 2019 vintage has excellent aging potential; over the next 8–12 years, it should develop deeper notes of toffee, dried fig, and spice, while gaining even more complexity and texture.

Production
Latinia Passito is born in the sun-drenched vineyards of southern Sardinia, where the Nasco grape thrives on well-drained, often sandy and calcareous soils influenced by sea breezes from the nearby Mediterranean. These conditions help preserve acidity while intensifying aromas, a key factor for great sweet wines. Grapes are typically harvested by hand at optimal ripeness, then further concentrated through a passito process—often involving drying on the vine or in carefully controlled conditions to enhance sugar and flavor concentration. After pressing the naturally sweet, richly flavored must, fermentation proceeds slowly at controlled temperatures to retain aromatic intensity. The wine is then aged, often in a combination of stainless steel and possibly neutral wood, allowing the varietal character and terroir to shine while building texture and depth before bottling into 0.375L formats.

Food & Serving
Santadi Latinia Passito 2019 is a superb match for classic dessert pairings such as fruit tarts, crème brûlée, almond cakes, and blue cheeses like Gorgonzola or Roquefort. It also works beautifully with traditional Italian pastries, honey-drenched sweets, and foie gras, or simply sipped on its own as a contemplative after-dinner wine. Serve lightly chilled, around 10–12°C (50–54°F), to highlight its aromatics while maintaining textural richness. Decanting is generally not necessary, but opening the bottle 10–15 minutes before serving will allow the wine to fully express its layered bouquet.
