This non‑vintage cuvée captures the historic charm of Prosecco from one of Italy’s most trusted and well‑known producers.

Tasting Notes
In the glass, this Prosecco Superiore shows a pale straw-yellow color with brilliant highlights and a fine, persistent perlage that forms a delicate, creamy mousse. On the nose, it opens with vibrant aromas of green apple, pear and white peach, layered with hints of acacia blossom, citrus zest and a gentle touch of pastry. The palate is lively yet polished, offering juicy notes of orchard fruits – crisp apple, pear and a suggestion of melon – wrapped in a soft, lightly off-dry texture that the “Extra Dry” style is known for. A bright, clean acidity keeps everything in balance, leading to a refreshing, gently fruity finish with subtle floral echoes. Enjoyed young, it shows its most vivid and aromatic character, though it will hold well for a couple of years after release for those who appreciate a slightly more rounded expression.

Production
The Glera grapes for Santa Margherita Valdobbiadene Prosecco Superiore Extra Dry are sourced from steep hillside vineyards in Valdobbiadene, where well-drained soils of marl and limestone, combined with a temperate climate and cool evening breezes from the nearby Dolomites, help preserve delicate aromatics and fresh acidity. The fruit is harvested at optimal ripeness, typically picked by hand to ensure careful selection of healthy, intact bunches. After a gentle pressing, the must is fermented at controlled low temperatures to lock in the variety’s floral and fruity notes. The sparkle is created via the Charmat (Martinotti) method, with a secondary fermentation in pressurized stainless-steel tanks, followed by a period on the lees to enhance texture and finesse before bottling under pressure to capture its lively, persistent bubbles.

Food & Serving
This Extra Dry Prosecco is a natural choice as an aperitif, pairing beautifully with light canapés, bruschetta, fresh cheeses, and delicate cured meats. It also complements seafood dishes such as shrimp cocktail, oysters, sushi, fried calamari, and simply grilled fish, as well as vegetable tempura, spring salads, and lightly spiced Asian cuisine. Serve well-chilled at around 6–8°C (43–46°F) in a tulip-shaped sparkling wine glass to concentrate the aromas while allowing the mousse to develop. Decanting is not recommended for this style; instead, open just before serving to enjoy its freshest, most vibrant profile.
