Santa Barbara’s Back to Basics is an organic Verdicchio dei Castelli di Jesi that embraces a deliberately minimalist approach. Unfiltered and fermented with native yeasts, it retains a natural opalescence and offers an authentic expression of Verdicchio from the hills of Marche. Rooted in a winemaking tradition that dates back to the 6th century, this is a lively, characterful white with plenty of regional identity.

Tasting Notes
Pale straw in colour with a naturally cloudy, opalescent appearance, the wine opens with delicate floral aromas, fresh citrus and orchard fruit, followed by subtle fermentative nuances that add complexity. On the palate, it is light, bright and energetic, with a lively citrus character balanced by a gently saline, mineral edge. The finish is distinctly Verdicchio, marked by the variety’s characteristic hint of sweet almond. Its freshness makes it especially enjoyable in its youth, while the combination of skin contact, lees ageing and natural structure should allow it to develop added savoury and almond-like complexity over the next few years. As an unfiltered wine, a small amount of natural sediment is possible and is part of its style.

Production
The organically farmed vineyards are located around Barbara in the Marche region, at approximately 250 metres above sea level. The clay soils, interspersed with tuffaceous and sandy veins, help give the wine its mineral character and pleasant saline tension. Grapes are harvested from well-exposed hillside vineyards and fermented at controlled temperature using only native yeasts. Extended skin maceration builds texture and aromatic depth, after which the wine remains in stainless-steel tanks on its fine lees until bottling. It is neither racked nor filtered, preserving its natural freshness, sediment and opalescent appearance.

Food & Serving
Serve lightly chilled at around 10–12°C. Back to Basics is a natural match for seafood, grilled prawns, mussels, calamari, delicate white fish and pasta with clams or fresh herbs. Its citrusy freshness and saline character also work well with vegetarian dishes, soft cheeses and light antipasti. Decanting is not necessary, although carefully standing the bottle upright before serving and pouring gently can help leave any natural sediment behind; alternatively, the wine can be gently swirled to integrate it.

Based in the hills around Barbara, Santa Barbara is a leading producer in Marche, with a strong focus on expressing the region’s native grapes and distinctive terroir. Through organic farming, native-yeast fermentation and low-intervention cellar practices, the winery gives Verdicchio a direct and contemporary voice while respecting its long local heritage. Santa Barbara’s wines have received recognition from international critics and juries, including praise and high scores from James Suckling, Luca Maroni and Vinous.
