Grapes are harvested at optimal ripeness to balance freshness with flavor concentration, typically picked during the cooler hours to protect their delicate aromatics. In the cellar, the must is gently pressed and fermented at controlled low temperatures in stainless steel to retain primary fruit and purity. The alcohol is then carefully removed using modern dealcoholization techniques designed to preserve aroma and structure, resulting in a wine-style beverage that remains true to the original Le Vaglie profile, but with zero alcohol.
