Production
The grapes for San Simone Perlae Naonis Red Edition Brut Millesimato are sourced from selected vineyards in Friuli-Venezia Giulia, where cool breezes from the Alps and maritime influences from the Adriatic Sea help preserve acidity and aromatic intensity. The soils are predominantly alluvial and gravelly, offering excellent drainage and contributing to the wine’s mineral tension. Grapes are harvested at night or in the early morning to preserve freshness, gently pressed, and vinified separately by variety. Fermentation takes place in temperature-controlled stainless-steel tanks to retain pure fruit character, followed by secondary fermentation using the Charmat-Martinotti method, which is ideal for highlighting Glera’s vibrant aromatics and Chardonnay’s crisp precision. The wine rests on its fine lees in tank for a short period to enhance texture and creaminess before final bottling as a Brut style.
