Crafted only in the finest vintages, AVI captures the depth, elegance and character that this noble Italian grape can achieve in the hills of Emilia-Romagna. Dedicated to Vincenzo, the founder of the San Patrignano community, and to the ‘avi’—the forefathers who passed down the cultivation of Sangiovese—this is a wine with real soul as well as pedigree.

Tasting Notes
In the glass, AVI 2021 shows a deep, vibrant ruby-red color with garnet hints forming at the rim, signaling both concentration and structure. The nose is refined and layered, offering a classic Sangiovese profile elevated to Riserva level: ripe red cherry, wild strawberry and plum are framed by notes of dried rose petals, violets and Mediterranean herbs. Subtle nuances of sweet spice, cedar, tobacco leaf and a touch of graphite emerge with air, reflecting careful oak maturation and a detailed, terroir-driven style. On the palate, the wine is full-bodied yet poised, with a beautiful balance between ripe fruit and vivid acidity. Juicy cherry and redcurrant flavors are supported by finely knit tannins that are firm but polished, giving AVI both immediate appeal and serious structure. Hints of licorice, balsamic, leather and savory spice unfold across a long, persistent finish. The 2021 vintage, captured in magnum, has excellent aging potential: while already approachable with proper aeration, it will continue to evolve and gain complexity over the next 10–15 years or more in this large format.

Production
San Patrignano’s vineyards lie in the rolling hills of Emilia-Romagna near the Adriatic coast, where a mix of clay-limestone soils, good drainage and significant day–night temperature swings create ideal conditions for expressive Sangiovese. Grapes for AVI are sourced from the estate’s best-exposed parcels, often from older vines with naturally low yields to intensify concentration. Harvest is typically carried out by hand, allowing careful selection of perfectly ripe clusters in the vineyard. In the cellar, Sangiovese bunches are gently destemmed and the must undergoes a temperature-controlled fermentation with extended maceration on the skins to extract color, aroma and fine tannins. The wine is then matured in quality oak—often a combination of large casks and barrels—for an extended period, followed by further bottle aging before release, to fully develop the Riserva’s depth, harmony and complexity.

Food & Serving
AVI in magnum is a natural partner for rich, savory dishes and fine cuts of meat. It pairs beautifully with slow-braised beef, ossobuco, lamb shank, roasted game birds, and classic Italian dishes such as tagliatelle al ragù, lasagne or wild mushroom risotto. Aged cheeses like Parmigiano Reggiano, Pecorino and mature hard cow’s milk cheeses also complement its structure and savory edge. Serve at 16–18°C (60–64°F) to highlight its aromatic nuances and freshness. Given the wine’s youth and concentration in the 2021 vintage—especially in magnum—decanting for 1–2 hours before serving is recommended to soften the tannins and allow the full bouquet to unfold.
