In the glass, Appius shows a straw-yellow color with subtle green highlights, hinting at its freshness and vibrancy. The nose is layered and expressive, with exotic notes of pineapple, papaya, and passion fruit, lifted by Williams pear, crisp apple, and delicate floral tones. On the palate, it is dense and creamy, yet beautifully balanced by a clear mineral edge that gives the wine tension and finesse. The finish is long, elegant, and persistent, and while it is already highly enjoyable now, its structure suggests excellent aging potential over the coming years.

Appius is an excellent match for refined dishes such as seafood, shellfish, poached fish, creamy risottos, poultry, or elegant vegetable preparations with herbs and delicate sauces. Serve chilled at around 10–12°C to best appreciate its aromatic depth and creamy texture; decanting is not necessary, though a little time in the glass will help it open up beautifully.
